VARIETY: 100% Verdejo
VINEYARDS: The big changes or temperature between the day and the night. Long a very cold winters make that the grapes have a perfect health and alcoholic maturity. The vineyard's located a few kilometers from the capital Valladolid are the furthest north of the D.O. Rueda.
ELABORATION PROCESS: The wines is from a natural night harvest. Elaborated from grapes picked at night from old vines, planet on gravel land and fermented for 22 days at 14º for 22 days. Then it stays on its fine lee for 4 months.
TASTING NOTES: At sight it is clean, brilliant, live, straw yellow with greenish iridescence. The nose is of powerful aroma of fresh grass, with aromas of fennel, medium intensity and complex. In the mouth os persistent, oily, elegant, structured, full-bobied, and fledhy. It has a wonderful and very persisten finish. Perfectly well balanced with their acidity.
MARRIAGE: Fish, sea food, rice and Mediterranean diet.
