Clarified must, fermentation at 15°C in stainless steel vats for 23 days, matured on yeast lees, clarified, stabilised at -4°C and filtered.
Straw-coloured with a steely reflection, clean and bright. Striking olfactory intensity with clear hints of black locust, anise and citrus fruits. Expectations at the olfactory phase are exceeded on the palate. Tasty, fresh, with a character. At the center of the palate, a hint of white fruits over grass and fennel notes stands out and arrives at the finish with that characteristic verdejo bitterness, which creates an immense aftertaste.
